How to Make Traditional Turkish Coffee (Cemil Usta Recipe)

Cemil Usta (died 2018) was the owner of Manda Batmaz Cafe which serves Traditional Turkis Coffee in Istanbul, Turkey. Cemil Usta makes the best Turkish coffee in Turkey since 1967. Condolences to his family and friends, and here is the special recipe of Cemil Usta in the name of his memory.

This recipe is for two small cups (fincan) of Turkish coffee with medium sugar.

Put 5 teaspoons full of medium roasted, powder ground coffee and 2 teaspoons of sugar. Add one cup (fincan) of just-boiled water and stir it 100 times. Add one more cup of just-boiled water on top of it and put it on the stove and start to watch carefully. When the coffee started to bloom take it away from the stove for 10-15 cm (4-6 inches) wait 2 seconds and put it on the stove again. When it started to boil directly share the coffee into two fincans. Holding two fincans on one hand is the key point to have this type of coffee.
